Ingredients

For the Chicken Marinade

  • 1 cup apple cider
  • 2 tablespoons soy sauce Can use gluten-free soy sauce for gluten-free option.
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 pieces chicken thighs Skin-on is recommended for extra flavor.

For the Autumn Slaw

  • 2 cups shredded cabbage
  • 1 cup grated carrots
  • 1/2 cup sliced apples Use a mix of sweet and tart apples for best flavor.
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

Marinade Chicken

  • In a bowl, mix together the apple cider, soy sauce, Dijon mustard, brown sugar, garlic powder, and a pinch of salt and pepper. Stir until the brown sugar is dissolved.
  • Take the chicken thighs and place them in a large resealable bag. Pour the marinade over the chicken and seal the bag. Let it marinate in the refrigerator for at least 30 minutes.

Cook Chicken

  • Preheat your grill or skillet over medium heat.
  • Remove the chicken thighs from the marinade and place them on the grill or skillet. Cook for about 6-7 minutes on each side or until the chicken is fully cooked through and has a nice caramelized surface.

Prepare Slaw

  • In a large bowl, combine the shredded cabbage, grated carrots, and sliced apples.
  • In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, and a sprinkle of salt and pepper until smooth.
  • Pour the dressing over the slaw mixture. Toss everything together well to combine.

Serve

  • Serve the sticky apple cider chicken hot with a generous helping of crunchy autumn slaw on the side.

Notes

For best flavor, marinate chicken for longer; be cautious not to over-marinate. Dress the slaw just before serving to maintain its crunch.
